Vegan Millet Sushi

Prep time: Around 45 - 50 minutes


Serves: 5 sushi rolls

Ingredients


Roasted root vegetables:


  • 1 cup (100 g) carrot strips

  • 1 cup (100 g) turnip strips

  • 1 cup (100 g) root celery strips

  • 1 cup (100 g) beet strips

  • 1 tbsp oil

  • ¼ tsp salt


Millet:


  • 1 cup (250 g) uncooked foxtail millet

  • 5 cups (1200 ml) water

  • ½ tsp salt


Broccoli cream:


  • ⅓ cup (50 g) peeled sunflower seeds

  • ¾ cup (50 g) fresh broccoli florets

  • ¾ cup (180 ml) cold water

  • 1 tbsp soy sauce or tamari

  • ¼ tbsp apple cider vinegar or white wine vinegar


Instructions


1. Preheat the oven to 400°F (200°C). Cover a baking tray or container with parchment paper.


2. Mix the carrot, turnip and root celery strips into oil and add them into the baking tray. Separately mix beet strips with oil and add it into the tray. Sprinkle some salt over the veggies for flavor.


3. Once the oven has reached a suitable temperature, bake the veggies for around 35 minutes, or until the veggies are observed to be soft and golden brown. Next, take it out of the oven and let it cool.


4. While waiting for it to cool, prepare the millet. Mix the millet with water and salt and then put it to a boil. Boil on medium heat for about 15 minutes, until the millet is soft. After that point, set the millet aside wait for it to cool down.


5. Meanwhile, boil sunflower seeds and broccoli florets in plenty of water for 15 minutes, and then drain and rinse them with cold water. Mix them into a blender along with cold water, soy sauce or tamari and vinegar, based on your own preference. Blend for a couple of minutes until smooth and creamy. Set aside.


6. After this, take a nori sheet and place it on a rolling mat with its shiny side on the bottom.


7. Scoop out a couple of tablespoons of millet and spread it out onto the sheet. Add some of the roasted veggies into the mix and about a tablespoon of broccoli cream.


8. Moisten the top edge of the nori sheet with some water and roll the mix into a tight sushi roll. Repeat this step until you have 5 sushi rolls.


9. Use a sharp and wet knife to cut the sushi into pieces. You can serve the sushi along with soy sauce or tamari and any leftover broccoli cream.
