If you have ever been to the southern part of India, you have probably heard of the word “dosa”. This breakfast dish is one of the most popular breakfasts in south India because it is affordable, easy to make and extremely delicious!
Dosa is traditionally made from rice, so it is very high in carbs. However, replacing the rice with millet can make it gluten-free and healthier.
We have compiled our favorite instant dosa recipe made of foxtail millet, so you can flex your healthy home cooking on Instagram!
Ingredients
Foxtail millet – 2 cups
Skinned Black Gram lentils – ½ cup
Fenugreek seeds – ¼ teaspoon
Salt – to taste
Butter or Ghee for frying
Method
Soak the millet in one bowl and lentils with fenugreek seeds in another for 3 hours. You can refrigerate the lentil bowl for an hour after letting it soak for 2 hours. This will add volume to the batter
Once soaked, drain the water from both bowls
Grind the contents of the lentil bowl in a grinder, adding water little by little until it has a thick cream-like consistency. Be careful not to add too much water or the batter will be runny
Grind the millet without any water (it shouldn’t need water after soaking) and add salt to taste while grinding
Mix both the batters and keep them overnight to ferment. Make sure to use a big bowl as the volume will double overnight
Grease a dosa pan or non-stick pan with butter or ghee to your liking
Spread the batter over the pan in a circular shape. You may add a little water if it’s too thick
Roll the dosa once the sides start rising up
Serve while it’s hot with the traditional coconut chutney
