Homemade Beetroot Powder Hummus Recipe

Now, is the time to drop the ‘beet’ in your kitchen and get serious about Beet Root Hummus which has an earthy flavor and brings a bright color to the dish apart from being smooth and delicious.


But why add Beets?


When you add beets, you add fiber, folate, vitamin C and antioxidants that may help lower blood pressure, fight inflammation and improve athletic performance. They promote heart health and support digestive health. The stunning light pink color just makes the hummus even better.


Come onnn!!! There has to be something about beets else Dwight Schrute wouldn’t have drooled over his beet farms for 9 seasons of The Office!





Ingredients:

  • 1 cup cooked chickpeas (drained, but keep the liquid);

  • Add beetroot powder for taste, health benefits and color;

  • 2 tbsp tahini paste

  • 2 tbsp fresh lemon juice

  • 1 tbsp paprika

  • 1 large clove of fresh garlic. Feel free to add more if you love garlic : p

  • Salt and black pepper for seasoning

  • Olive oil

Preparation:

Place the chickpeas, ½ cup of the drained liquid, tahini paste, lemon juice, paprika, garlic and ¾ cup of the beet root powder into a blender, and blend. If too dry, add more of the chickpea liquid. Season with salt and pepper to taste. It should become an excellent creamy and bright pink mixture of awesomeness... And that’s it, it’s that easy!


Let’s get the party started!

Veggies are, of course, the perfect dipper for this Beet Hummus, but your favorite crackers or pretzels work equally well. It also makes a healthy and tasty spread for sandwiches and wraps, so it’s time to get creative with the beet root hummus.
