Easy to Make & Super-Filling Millet Pancake Mix Recipe

Pancakes are super easy to make for breakfast. They are most people's favorite meal of the day!


Sometimes you just a hot breakfast breakfast that is easy that can be made in a flash. Enter a pancake recipe. I have tried tons of pancake mixes in the market and some of them are really good. But they are full of sugar.


I cam across this pancake mix on Amazon that is made of millet and 4 other flours with jaggery, a healthier alternative to sugar. It is quite affordable and they have two flavors- classic and an almond & chia.


Millet Pancakes

INGREDIENTS

  • 1/2 cup millet flour (I used Incept Food's Almond & Chia Pancake Mix from Amazon US)

  • 1/3 cup milk (Can add vegan milk instead to make it a vegan recipe)

  • 1 egg (You can avoid this to make it vegan)

  • 1/2 tsp baking powder

  • 1/2 tsp sugar (I used coconut sugar)

  • A pinch of cinnamon

  • A pinch of salt

  • Butter for cooking


INSTRUCTIONS


  1. Add the dry ingredients – millet flour, salt, baking powder, cinnamon powder and sugar – to a bowl

  2. Mix well until combined

  3. Now add the milk and eggs to this

  4. Mix gently until combined

  5. Heat a pan and spread some butter

  6. Pour about 1/4 cup and let the batter spread to form a thick circle

  7. Cook on both sides until golden brown

  8. Add more butter as needed

  9. Best served warm but keeps well for about 2 hours

  10. You can add some bananas and berries on top before serving

I have been eating this for breakfast the last few weeks and honestly, they do not have any additional sweetener. You can add fruits, honey, chocolate or maple syrup or anything you like.
