Fluffy & Moist Red Velvet Cake Recipe

Made with Cocoa Powder and Beetroot Powder


There is nothing in the world which can’t be fixed with a slice of a red velvet cake.


We all must have eaten it on our birthday parties or made it at home on a weekend as they are super easy and quick to make. The texture is so soft and creamy.


And since we know that you have worked out so well this week, you deserve a treat too.


Here’s a quick eggless recipe for red velvet cake using Beet Root Powder.



 

Ingredients

For Red Velvet Cake:

  • 1 cup whole wheat flour

  • 1 cup raw powdered sugar aka castor sugar

  • ½ tsp vanilla extract

  • 1/2 cup oil

  • 6 tbsp curd / yogurt

  • ¼ cup milk

  • 1 tbsp vinegar/ lemon juice

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • ½ tbsp salt

  • 2 tbsp beetroot powder

  • 2 tbsp cocoa powder

For Cream Cheese Frosting:

  • 1/3 cup cream cheese

  • ½ cup butter

  • 1 tbsp vanilla extract

  • 2 cups powdered sugar



Let’s Get Started


Sieve flour, cocoa powder, baking powder, beetroot powder and salt together and keep it aside

Add vinegar, oil and sugar to the milk and keep aside for 5 minutes

Mix all the ingredients well and pour the batter in a preheated oven for 35 minutes at 355F

Prepare the frosting using cream cheese, sugar, butter, vanilla extract and salt

Once the cake is cooled, cut into 2 halves and ice the layers and sprinkle some beetroot powder/ grated coconut at the top




 


Notes: Do not over mix and refrigerate the cake after applying the frosting to let it set completely.
