20 Minute quick recipe from South India - Kodo Millet Upma

I had traveled a few months back to South India and came across some delicious and spicy recipes in multiple cities. At one small restaurant off the highway, I ate this super filling and tasty dish called millet upma. I recreated at home a few days back and it was the quickest meal I have made for myself in a long time.

Serves: 4


 

List of Ingredients

  • 1 tsp sesame oil

  • 1/4 teaspoon mustard seeds (rai/ kadugu)

  • 1 tsp split white urad dal

  • 1 green chili

  • 1 dry red chili

  • 1/2 cup onion (finely chopped)

  • 1 tsp ginger (finely chopped)

  • 1/4 tsp turmeric powder (Haldi)

  • 1/4 cup carrot (gajar, finely chopped)

  • 1/4 cup green beans (finely chopped)

  • 1 cup Kodo millet

  • 1 lemon and salt to taste

  • 2 tbsp curry leaves (finely chopped)

  • 1 tbsp ghee


Let’s Get Started

Step 1: Heat the oil in a pressure cooker over medium heat. Now add the mustard seeds and split urad dal and allow it to crackle. Allow the urad dal to turn golden brown and crisp.


Step 2: Once the dal is golden brown, add the green chili and red chili and sauté for a few seconds.


Add the onion, ginger, and sauté until the onions soften. Once the onion softens, add the curry leaves, turmeric powder, beans, carrots, Kodo millet, salt, and 2-1/2 cups of water. (You could use foxtail millet as well if you do not have Kodo millet with you)


Step 3: Cover the pressure cooker and pressure cook the millet upma for 5 to 6 whistles, simmer for 5 minutes, and turn off the heat. Allow the pressure to release naturally.


Step 4: Once the pressure releases, give it a gentle stir. Squeeze in the juice from one lemon and stir in the chopped coriander leaves.


Step 5: Serve the Kodo millet upma recipe along with tomato chutney or coconut chutney to make it a wholesome breakfast.

 

I highly recommend this dish since it is can be made vegan and the calories in Kodo millet are minimal.
