I had traveled a few months back to South India and came across some delicious and spicy recipes in multiple cities. At one small restaurant off the highway, I ate this super filling and tasty dish called millet upma. I recreated at home a few days back and it was the quickest meal I have made for myself in a long time.

List of Ingredients
1 tsp sesame oil
1/4 teaspoon mustard seeds (rai/ kadugu)
1 tsp split white urad dal
1 green chili
1 dry red chili
1/2 cup onion (finely chopped)
1 tsp ginger (finely chopped)
1/4 tsp turmeric powder (Haldi)
1/4 cup carrot (gajar, finely chopped)
1/4 cup green beans (finely chopped)
1 cup Kodo millet
1 lemon and salt to taste
2 tbsp curry leaves (finely chopped)
1 tbsp ghee
